One Pot Creamy Chicken Spaghetti

So I found myself with nothing on my refrigerator except chicken yesterday. It’s a Sunday lunch and I need to have something special or unusual (I can get away with that) on the table. I haven’t done my grocery yet and I’m just really feeling lazy. I could do fried chicken but I’ve already used up my feeling lazy card for the month.

My pantry has about 1/4 kilo spaghetti. I found a little box of cream. Oh, and there’s a cream of mushroom.

So what’s a mom to do?

Creamy Spaghetti Chicken, it is! I figured,, if it works for pork chops, it should work with chicken too! And it did. Son slurped the soup, hubby attacked the chicken.

Here’s the recipe:

One Pot Creamy Chicken Spaghetti

Ingredients:

  • 1/4 kilo spaghetti
  • 1/2 kilo chicken
  • 2 tbsp butter / margarine
  • garlic, minced
  • 1 tbsp Patis (fish sauce)
  • Cream of Mushroom
  • 1 Nestle Cream

Procedure:

  1. Saute garlic in butter, add chicken and patis. cook until chicken is almost rendering fat. (Sangkutsa).
  2. Prepare cream of mushroom according to instructions and pour on chicken. Let simmer.
  3. Add your spaghetti. Watch it at this point making sure that spaghetti doesn’t stick to each other.  Mix occasionally. Allow for the spaghetti to cook (about 10 minutes).
  4. Add cream. Mix. Turn off fire.
  5. Serve hot!

Ps, I added some chili on mine for some added heat!

Ps again. Might be too much but some cream cheese would be a wonderful addition!

And yes, before I forget, lets add some healthy ingredient, add some carrots if you have some.  See my semi rant below.

 

 


Ps: I got this question, more of a criticism actually, that using mixes and canned soups is not healthy and I should try to share a recipe made from scratch. And I totally get that. I’d really like to do more healthy food options, but I’m definitely doing more of  the easy ones and sometimes that includes using canned soups and dressing mixes. I totally understand if that’s not something you want for your family though. It’s not for everyone, but for those of us who have to eat on the side on a daily basis, eating noodles, corned beef and hot dogs regularly, this is actually a healthier option.
