Coconut Marinade for Grilled Pork Chops

Get a new layer of yum for your grilled pork chops! This Coconut Marinade is a mouthwatering recipe that’s so easy to prepare and cook.

Just thinking about this dish is making me drool. My sisters and I made this for the weekend and it was a total blast. I got the recipe from, or I thought I got the recipe from Food.com but I just cannot find the link anymore.  This was my printscreen:

If you will notice on our recipe below, we made some replacements and additions. Instead of crushed red pepper, we put in red bell pepper. It was actually a mistake. I  really thought that it was calling for red bell pepper haha! Which probably was the reason why the sauce turned out so delicious!

There is also no salt in this recipe. My husband didn’t notice at all that there was no salt. A first! The pork turned out yummy and it was really creamy. I’m not sure how to really say it but in Tagalog, it was malinamnam.

After grilling the pork, I turned the marinade into the sauce. I added a couple of pinches of salt. Next time maybe Ill try adding Patis (fish sauce) instead. I boiled it for about 3 minutes. The smell was totally out of this world. It was a combination of the lemon, the pepper, the curry. If it was up to me, I’d totally spoon the whole thing into my plate.

 

Coconut Marinade for Grilled Pork Chops

Ingredients
150 ml coconut milk preferably cream
10 ml curry powder
10 ml lemon juice maybe you can sub for Calamansi instead
8 cloves garlic minced (I’m addicted to garlic)
5 ml washed brown sugar (this is what I have)
1 pc red bell pepper minced
3-5 pinch salt
1 kilo pork chops or pork steak

Instructions
Mix all ingredients together.
Pour over meat and rub. Put meat inside the refrigerator for at least 4 hours or preferably overnight.
Grill the pork. Place it on a medium fire and turn once after 3 minutes.
Pour the marinade in a pan and bring to a boil over low fire. Simmer for about 3 minutes.
Notes
The sauce was not enough for the whole 1 kilo of pork. I will triple the sauce If I were you.
