Kimchi Fried Rice Recipe

It is one in the morning. You’re watching your favorite Korean Drama, and suddenly, scene goes to poor leading lady cooking kimchi rice for rich guy. (at which he shakes his head in distaste, then discovers that it’s not so bad after all) What are you to do when you suddenly go craving for some?

Well of course, cook some yourself.

After all, kimchi fried rice is made of leftover rice, some kimchi, an egg and sesame oil, which I happen to have all the time.

Here’s a quick 5 minute recipe. Set your timer!

Korean Kimchi Fried Rice

Ingredients:

2 tbsp oil

1 cup chopped kimchi

2 tbsp kimchi juice

1 tbsp gochujang

3 cups rice

1 tbsp sesame oil

spring onion for garnish (optional)

sesame seeds (optional)

1 sunny side up egg

Instructions:

  1. Heat up oil and stir in kimchi. Add gochujang and mix till kimchi is hot.
  2. Add rice and kimchi juice. Mix till rice is thoroughly heated, about 5 minutes.
  3. Add sesame oil and stir about 2 minutes.
  4. Transfer to plate, and top with 1 sunny side up egg.

Enjoy!

Notes: Okay, I lied, it’s somewhere nearer 10 minutes, but who’s counting?! If you have some sesame seeds sprinkle some as you wish. Same goes with spring onion. I don’t normally add salt, add as you like. if you don’t have gochujang, it’s okay. But it’s the magic ingredient that makes it taste like -well, Korea. But if I had to choose, lose gochujang or sesame oil, I’d get sesame oil.
