Sometimes even the simplest, most nourishing meals seem out of reach on hectic afternoons. YOu’re either too tired or not in the mood for hunting ingredients around yourpantry. That’s where my homemade soup mix recipe comes in. This “pantry soup” recipe is an easy soup mix you can prepare ahead and keep on hand for anytime you need a comfort bowl of goodness, no last-minute shopping or prep required.
Whenever the mood strikes, grab your pantry soup mix and simmer up a hearty, satisfying bowl of nutrition.
Homemade Soup Mix Recipe
Ingredients:
2 cups nonfat dry milk powder
3/4 cup cornstarch
2 tablespoons dried minced onion
¼ teaspoon onion powder
¼ teaspoon garlic powder
1/2 teaspoon ground black pepper
1/4 cup chicken powder
1 teaspoon dried basil (optional)
1/4 teaspoon dried thyme
Instructions:
- Combine dry milk, cornstarch, onion flakes, onion and garlic powder, pepper and chicken powder.
- If desired also add basil and thyme. Mix well and store in the refrigerator or freezer.
- When using the mix combine 1/3 cup of the mix with 1 1/4 cups of water in saucepan. Cook and stir until thickened.
- Add more liquid if a thinner consistency is desired. Garnish with fresh herbs, chili oil, cheese, or whatever toppings your heart desires.
Making Homemade Soup Mix Recipe Versions
The possibilities are truly endless with this “instant” soup mix. i purposely did not include classic soup ingredients like grains and legumes because they are far too long to cook. You can feel free to adjust the ingredients to your liking by adding other legumes, grains, dried veggies, and spices if you want but these extends the cooking time.
What I do is mix these homemade soup mix with fresh ingredients or canned veggies. I suggest to keep a can or two of beans such as white cannellini. You can also add either macaroni, corn, mushroom, or potato for a hearty soup! As cooks we get so busy, we forget how nourishing – both body and soul – a simple bowl of soup can be.
