Rainy season or cold December nights, there’s nothing like a hot bowl of soup to make you feel grounded. This Creamy Wild Mushroom Soup with Potatoes is both rustic and comforting with chunks of potato for body, earthy mushrooms for depth, and a creamy broth that feels warm and comforting.
I love how versatile it is. Serve it with crusty bread for lunch or dinner, or make it ahead in a big pot and reheat for weekday baon. The potatoes turn it into a filling meal, while the mushrooms add a savory, almost meaty flavor without being heavy.

Notes
-
-
For extra richness, stir in cream cheese instead of cream.
-
Use a mix of dried wild mushrooms for stronger flavor (soak them in warm water first, and use the soaking liquid in your broth).
-
Want a smoother soup? Blend half of it with an immersion blender, then return to the pot.
