I know it’s back to school season again. Though Anakin comes back to school in September since he’s following the Homeschool schedule. But if you’re looking for a child friendly recipe to add to your lunch arsenal, try this corned beef patties which is also perfect for baon for lunch. It’s an easy recipe, and filling too. They can easily gobble up 2 -3 patties and have enough energy for the rest of the day.
I usually serve this up for breakfast but can be lunch if you want it!
Corned Beef Patties
Ingredients
- 1/2 cup corned beef
- 2 cups diced parboiled potatoes
- 1/4 cup finely chopped parsley
- 1/4 cup finely chopped onions
- 1/4 cup finely chopped green bell pepper
- 1 chicken bouillon cube dissolved in 1/4 cup boiling water
- 2 eggs, beaten
- 3/4 cup breadcrumbs
- oil for frying
- Maya all-purpose flour
Procedure
In a bowl, combine the first 8 ingredients. Blend well. If the mixture is too wet, add some flour. Form into oval-shaped patties. Dredge in breadcrumbs. Chill for a few minutes then deep fry in hot oil until golden brown. Drain.
