Easy Dessert: Eggless Pandan Puto Cake

Want some puto but have an allergy to eggs? You will be happy with this eggless puto recipe! It’s also very easy and can be done in 5 steps.

Puto Cake is the Filipino version of rice cake. It can always be found in celebrations, and available in markets every morning. Pandan is a good flavoring for it that brings color and a good aroma. My children like them because they’re green food but not vegetable haha.

This is very easy to make and you dont even have to have an oven. A steamer will do. I’d like to point out to take special care in steaming by covering the cakes with cloth so that the moisture from the cover does not fall in your cupcakes.

  • 1 cup sugar (light brown)
  • pinch of salt
  • 1 tbsp vanilla
  • 2 to 3 drops food coloring, green

Procedure:

Make the pandan water: Boil 2 cups water and 10 – 15 pandan leaves for about 15 minutes. Remove from heat and let cool completely.
Mix all the dry ingredients well.
Mix dry ingredients with the water with vanilla and skim milk
Steam for 15-18 mins.

Notes:

You can top with cheese, salted egg, tapa flakes or anything you want. Use low steam if you don’t want it to break on top. Cover with cloth so the steam will not drop on the puto.

...I don't know exactly what a prayer is. I do know how to pay attention, how to fall down. into the grass, how to kneel down in the grass, how to be idle and blessed, how to stroll through the fields, which is what I have been doing all day. Tell me, what else should I have done? Doesn't everything die at last, and too soon? Tell me, what is it you plan to do with your one wild and precious life?
