Crispy Smashed Baby Potatoes

Ingredients:

  • 1 kilo baby potatoes
  • 3 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. Place the potato pieces in a medium pot and cover with cold water by 1 inch. Bring to a boil over high heat then reduce to medium-low and simmer until the potatoes are just tender when pierced with a fork, about 12-15 minutes.
  2. Drain the potatoes well and return them to the hot pot. Cook over medium heat for 1 minute, shaking the pot occasionally, to evaporate excess moisture.
  3. Transfer the warm potatoes to a large baking sheet. Using a potato masher or the back of a wooden spoon, gently smash each piece just until slightly flattened. You don’t want to completely mush them but make them thin enough so they;; crisp faster.
  4. Drizzle the olive oil over the potatoes and season with salt and pepper. Toss gently to coat.
  5. Arrange the potatoes in a single layer, making sure none overlap.
  6. Roast for 15 – 25 minutes minutes, flipping once halfway through, until deep brown and crispy on the bottom.
  7. Garnish with parsley, if using. Serve hot.

The hardest part is waiting for them to finish roasting, the aroma that fills your kitchen is absolutely irresistible! This recipe makes enough for 4 generously sized portions.
