Easy Baked Sushi Recipe for Busy Parents

Today I’m sharing a simple yet crave-worthy pandemic classic – the humble sushi bake, also known as “Casserole sushi”.
This Japanese fusion dish layers sushi rice and an assortment of fillings like salmon, grilled tofu, pickled ginger and scrambled egg. The mixture is baked until bubbly, then topped with teriyaki sauce or mayo sauce mix for a flavorsome alternative to traditional hand rolls.
Was suddenly craving this pandemic food but I don’t have most of the usual ingredients. So I tried making this fun baked sushi recipe that has minimum ingredients but maximum flavor. It has all the flavors you love from traditional sushi rolls, but with a lot less fuss. Sometimes “easy” means streamlining a recipe to its bare essentials – and that’s today’s pared-down sushi bake.
Sushi bakes make a perfect midweek solution for busy parents missing the flavors of their favorite sushi roll. With just a few basic ingredients from the pantry, you can enjoy the flavors of Japan at a fraction of the cost of takeout. Now it can be a go-to merienda that the whole family will love.
To make sushi bake, start by cooking your sushi rice. I just used our Jasmine rice but for better adherence, Japanese rice is best.
While the rice is cooling slightly, prepare the toppings and any additional fillings like mango, etc,
Mix the cooled rice with rice vinegar and sugar and spread the rice in a greased baking dish. Top with layers of the fillings, roe and nori sheets torn into pieces.
Sprinkle top with roe and nori as well as Furikake.
Bake at 350 °F until bubbly, about 15- 20 minutes.

Sushi Bake
Ingredients
Rice
- 4 cups cooked sushi rice
- 2 tablespoons rice vinegar
- 1 tablespoon sugar
- 1 teaspoon salt
- Furikake (optional)
Toppings
- 3/4 cup mayonnaise (preferably Kewpie!)
- ¼ cup cream cheese or grated cheddar cheese
- 1 cup imitation crab, chopped
- 1/2 cup roe
- 1/2 cup carrot, grated
- Sesame seeds for garnish
Instructions
- Combine the rice, rice vinegar, sugar and salt in a bowl. Mix well.
- Layer in an oven safe tray and press firmly.
- (Sprinkle with Furikake on top. (if using)
- In a bowl, mix the mayonnaise and cheese.
- Add the imitation crab and carrot. Toss to coat the rice with half of the mixture..
- Spread the remaining mixture evenly over the rice layer.
- Sprinkle roe, Furikake, and chopped nori on top.
- Bake at 350°F for 15-20 minutes, until topping is lightly browned.
- Allow to cool slightly then cut into squares and serve by scooping on nori sheets.
Notes
You can make your own Furikake by mixing up the following if you have them:
- ¼ cup crushed or grinded nori
- 1-2 teaspoons togarashi
- 1 tablespoon black or white sesame seeds roasted
- 1 sachet bonito flakes
